Gluten-Free Snickerdoodles

Here is an easy and delicious cookie recipe that is free of gluten, dairy, corn, sucrose, soy, and egg.

1/4 cup coconut sugar

1 Tbsp. cinnamon, plus 1 tsp. cinnamon used separately

2 cups gluten-free flour mix*

1 tsp. baking soda

1 tsp. xanthan gum

1 tsp. salt

1/2 cup grapeseed oil

1/2 cup honey

1 Tbsp. alcohol-free vanilla

Preheat oven to 325 degrees.

In a small bowl, combine coconut sugar and 1 Tbsp cinnamon.  Set aside.

In a large bowl, combine gf flour, baking soda, xanthan gum, salt, 1 tsp of cinnamon, grapeseed oil, honey, and vanilla.

By the teaspoon, roll dough into 2 inch balls between the palm of your hands.

Place dough ball into coconut sugar/cinnamon mixture.  Roll around and cover the entire ball.

Place coated balls onto an oiled cookie sheet.  Gently press each ball with a fork and flatten slightly.

Bake for 15 minutes.

Enjoy!

*I keep my own blend of flours in the freezer that I can just pull from when needed.  That mix is:  4 cups brown rice flour, 1 1/3 cups potato starch, 2/3 cup tapioca flour, and 1 cup ground flax seed.
