Sweet Mint Tea Popsicles

Sweet Mint Tea PopsiclesIn Baja, where the desert meets the sea, I made sweet mint tea popsicles.  If it’s still hot in your region, try these refreshing treats.

2 cups water

1 organic mint tea bag

4 Tbsps. raw honey

In a small saucepan, boil water.

Place tea bag in hot water and steep for 10 minutes.

In the meantime, stir in honey.

Set aside and let cool to room temperature.

Pour tea into popsicle molds and freeze for 6 hours or overnight.

Makes about 8 popsicles.
